Five Pride-Themed Cocktails To Drink in Support of the Dr. Peter AIDS Foundation in Vancouver (with a recipe included!)

Summer and well-crafted cocktails pair incredibly well together. If they help further a worthy cause, the sipping is that much better.

This summer, from July 14 to August 6, 2017, in the lead-up to Vancouver’s annual Pride celebration, over 45 local bars and restaurants will be serving signature cocktails, with partial proceeds going to the Dr. Peter AIDS Foundation.

The Pride Crawl Fundraiser will be the first of its kind in the city. Restaurants and bars in the city have been invited to show their Pride and aid those with HIV by creating special cocktails.

A portion of the sale of each drink will go towards the Dr. Peter Centre, a facility in Vancouver’s West End that provides a host of services, including compassionate HIV care, to those affected. Many of their clients are grappling with additional challenges, such as mental illness, addiction, and poverty.

The spirited Fundraiser is also about taking a proud stand with the LGBTQ+ community, as well as raising awareness about HIV. The fact that the majority of the Centre’s clients are from the LGBTQ+ community makes the Foundation a very suitable choice for this inaugural Fundraiser.

Here are five cocktails to get your imbibing with Pride going:

1. La Vie Boheme

Kaitlyn Stewart has created a refreshing and bohemian combination of Don Julio Blanco tequila, Aperol, pineapple gomme, lime juice, rosemary, Peychaud’s bitters, and pineapple juice.

2. Pride Colada
YEW seafood + bar (Four Seasons Hotel Vancouver, 791 West Georgia Street)

This play on a classic piña colada, crafted by Lauren Mote, is a blend of Havana Club 3-year-old white rum, marula fruit, pineapple, sweetened coconut, plum, and root beer bitters.

3. The Proud Seaman
Uva Wine Cocktail Bar (900 Seymour Street)

Created by Sabrina Dhaliwal, this cocktail pops with colour and tongue-in-cheek fun. The drink is a combo of Belvedere vodka, Okanagan Spirits’ Haskap Liqueur, apple black tea, lemon juice, Bittered Sling cranberry bitters, and soda. It’s a balance of sweetness and tartness, living up to its jaunty nautical moniker.

4. Guts Grit
Wildebeest (120 West Hastings Street)

Josh Pape offers this gutsy cocktail, made by “shak[ing] like hell” cocoa-infused Scotch, Punt e Mes, lemon juice, and cherry purée, and then “spray[ing] orange oil over the drink.”

5. Ipanema
Café Medina (780 Richards Street)

This rendition of Brazil’s national drink was crafted by Thiago Alves. Café Medina’s Brazilian bartender has created a floral drink of cachaça, Cointreau, and fresh lime juice, with spicy, botanical notes from bird’s eye chili, rosewater, and fresh mint. An egg white provides froth, while rose petals finish the drink and its ode to South American beach-side drinking.

Recipe:
Ingredients:
½ oz cachaça
½ oz cointreau
¾ oz fresh lime juice
½ oz simple syrup
3 drops rosewater
1 egg white
1 bird’s eye chilli
4 fresh mint leaves
rose petals and lime to garnish
Method:
1) Add all liquids and the egg white to a cocktail shaker and dry shake.
2) Add chili, mint, and ice to shaker and shake hard.
3) Double strain the mixture into a chilled coupe glass.
4) Garnish with lime on top and delicately placed rose petals.
