Winemaker’s Dinner with Clos Du Val and Fairmont Chateau Whistler

Join The Fairmont Chateau Whistler for an unforgettable family style winemaker’s dinner, taking place in the newly opened Grill Room Restaurant April 21, 2012. Don Cook from Clos Du Val Winery, will be making his way up to Whistler to host this exciting event and share his knowledge and passion for Clos Du Val Wines. Named 2010 Winery of the Year by Wine Spirits Magazine, Clos Du Val is celebrating 40 years of exceptional winemaking based on their guiding principles of individuality, expressionism and ‘vindependence’. As their head winemaker put it, “We do not make wine in hope of achieving a great score; we make wine in the hope of achieving greatness.”
The evening will kick off at 6:30 pm in The Grill Room Restaurant with an introduction from Don and from Fairmont Chateau Whistler’s sommelier, Benjamin Bureau. Guests will then be invited to find a seat and enjoy the first course consisting of local Qualicum Bay scallops paired with a Carneros Chardonnay followed by peppered bison carpaccio paired with a Clos Du Val Pinot Noir.
For the main event, each roundtable will be served a selection of roasted meats including venison, chicken, pork chop and duck confit with tasty sides to share such as The Grill Room’s popular ‘Grown Up’ Mac and Cheese with lobster and pancetta, Pemberton Valley root vegetables and fingerling potatoes, and sautéed BC mushrooms. The evening will wrap up with a few more notes from Don, a selection of artisan cheeses served with a Stags Leap District Cabernet Sauvignon and petit fours to finish off the meal.
Reservations for this one-of-a-kind Whistler roundtable dinner are limited, so be sure to book in advance. Tickets are $145 per person, plus taxes and gratuities, and can be purchased by calling The Fairmont Chateau Whistler Food and Beverage department at 604 938 2036.
